Oatmeal Cake
Family favorite. Ben Spann would say “This cake is musty. I must have another piece.” Of course, he said that about every cake Doris made.

  • 1 1/4 cup boiling water
  • 1 cup Quick Quaker Oats
  • 1/2 cup shortening
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • pinch Salt
  • 1 1/3 cup flour
  • 1 teaspoon cinnamon
  • 1 teaspoon soda
  • Topping
  • 6 tablespoon melted butter
  • 1/2 cup brown sugar
  • 1/4 cup condensed milk
  • 1 cup Coconut
  • 1/2 cup pecans

  • 1 cup Quick Quaker Oats
  • 1/2 cup shortening
  • 1 cup sugar
  • 1 cup packed brown sugar

  • 1 1/3 cup flour
  • 1 teaspoon cinnamon
  • 1 teaspoon soda
  • Topping
  • 6 tablespoon melted butter
  • 1/2 cup brown sugar
  • 1/4 cup condensed milk
  • 1 cup Coconut
  • 1/2 cup pecans
Instructions
  1. Pour boiling water over oatmeal and let set
  2. Cream shortening, sugars, eggs and salt
  3. Add sifted flour, cinnamon, soda and oatmeal
  4. Put in a 9-inch x 15-inch pan and bake 350 for 35 minutes
  5. Topping
  6. Melt butter, add remaining ingredients and stir together
  7. Spread topping on top and put back in oven until top is browned.

When Debbie had her bridal shower in 1973 everyone was to bring a favorite recipe. She received this recipe from both her mom and her future mother-in-law Vonnie. A family favorite.
